Description

WHITE TRUFFLE (Tuber Magnatum Pico): the white truffle is the finest kind of truffle. The region of Molise is the Italian region with the highest white truffle production, since they are so abundant there. Its peridium has a yellow-ocher color, sometimes with some green hues; its gleba, on the other hand, has a hazelnut or brown color marbled with white veins. Its shape can be roundish or lobed, depending on the soil, while its weight may vary from a few grams up to more than a kilo. This truffle grows along water streams and under some trees, like linden trees, poplars, willow-trees and oaks. The harvest period takes place from 1st October to 15th January. It should be consumed cut into thin strips and it’s particularly particularly recommended for warm dishesm, since they enhance its aroma.

RECCOMENDED QUANTITY: It’s recommended to use a minimum of 10g of product per portion.

STORAGE CONDITIONS: To ensure an optimal preservation of the product, the truffles must be stored in the fridge at the temperature of 3°C-4°C in a glass or plastic airtight container, wrapping up every piece in towel paper and making sure to change the latter every single day. Consume within 4/5 days after the order is delivered. Avoid freezing the truffle. As a matter of fact, the organoleptic quality of this kind of truffle is enhanced if consumed raw and cut into very thin slices on the eggs, tagliatelle and risotto with butter or meat tartare.

CLEANING INSTRUCTIONS: Before consumption, the truffle should be washed under a light stream of cold water, brushed, to get rid of all the dirt, and then left to dry wrapped in paper towels.

SHIPPING METHOD: The orders of fresh truffles are processed from Monday to Wednesday until 2 p.m., while the orders received later will be processed the following Monday. The package will be delivered within 24/48h after the order fulfillment. The products will travel in isothermal boxes with ice, in order to assure their integrity and freshness, as freshly harvested.
