SUMMER TRUFFLE (Tuber Aestivum Vittad): the summer truffle or “Scorzone” is very similar to the uncinatum truffle with the difference that the first one ripens in summer, while the second one in autumn-winter. Even the aroma, compared to that of the uncinatum truffle, is much more delicate. Its peridium is black with pyramidal warts, while its gleba is of a hazel or yellowish color when it is at its maximum ripeness. The tuberous shape is quite regular, of medium-large dimention and in some specimens it can reach even up to a kilo in weight. It grows under oak, hornbeam, holm oak and hazelnut trees. The harvest period runs from May 10th to August 31st. It is a truffle widely used in the kitchen as a base for dishes because of its very delicate and pleasant aroma that resembles porcini mushrooms.
RECCOMENDED QUANTITY: It’s recommended to use a minimum of 30g of product per portion.
STORAGE CONDITIONS: To ensure an optimal preservation of the product, the truffles must be stored in the fridge at the temperature of 3°C-4°C in a glass or plastic airtight container, wrapping up every piece in towel paper and making sure to change the latter every single day. Consume within 4/5 days after the order is delivered.
Avoid freezing the truffle. As a matter of fact, the organoleptic quality of this kind of truffle is enhanced if consumed raw and cut into very thin slices on the eggs, tagliatelle and risotto with butter or meat tartare.
CLEANING INSTRUCTIONS: Before consumption, the truffle should be washed under a light stream of cold water, brushed, to get rid of all the dirt, and then left to dry wrapped in paper towels.
SHIPPING METHOD: The orders of fresh truffles are processed from Monday to Wednesday until 2 p.m., while the orders received later will be processed the following Monday. The package will be delivered within 24/48h after the order fulfillment. The products will travel in isothermal boxes with ice, in order to assure their integrity and freshness, as freshly harvested.
