Description
ORDINARY BLACK TRUFFLE (Tuber Mesentericum): The ordinary truffle is also known as “black truffle of Bagnoli Irpino” because it is widely used in this area. The peridium is black, warty and has a characteristic basal depression, while its gleba is of a brownish-gray color, roundish in shape and medium in size. It grows in beech, maple and hornbeam woods. Its harvest period is from October 15th to January 31st. Possessing a strong flavor, it is particularly used to season foods. It is recommended to be eaten raw.
RECCOMENDED QUANTITY: It’s recommended to use a minimum of 30g of product per portion.
STORAGE CONDITIONS: To ensure an optimal preservation of the product, the truffles must be stored in the fridge at the temperature of 3°C-4°C in a glass or plastic airtight container, wrapping up every piece in towel paper and making sure to change the latter every single day. Avoid freezing the truffle. As a matter of fact, the organoleptic quality of this kind of truffle is enhanced if consumed raw and cut into very thin slices on the eggs, tagliatelle and risotto with butter or meat tartare.
