BRUMALE TRUFFLE (tuber brumale vitt.): the brumale truffle has a black peridium with small and fine warts, while its gleba is of a brownish-gray color.Small in size, it grows in coniferous forests and, unlike other truffles, it also tolerates clayey soils with stagnant water. Its symbiotic plants can be oaks, pines, holm oaks, downy oaks and hornbeams. The harvest period runs from January 1st to March 15th. In the kitchen, it is particularly appreciated by lovers of strong flavors and by those looking for a stronger taste than that of other truffles.
RECCOMENDED QUANTITY: It’s recommended to use a minimum of 15g of product per portion.
STORAGE CONDITIONS: To ensure an optimal preservation of the product, the truffles must be stored in the fridge at the temperature of 3°C-4°C in a glass or plastic airtight container, wrapping up every piece in towel paper and making sure to change the latter every single day. Consume within 4/5 days after the order is delivered. Avoid freezing the truffle. As a matter of fact, the organoleptic quality of this kind of truffle is enhanced if consumed raw and cut into very thin slices on the eggs, tagliatelle and risotto with butter or meat tartare.
CLEANING INSTRUCTIONS: Before consumption, the truffle should be washed under a light stream of cold water, brushed, to get rid of all the dirt, and then left to dry wrapped in paper towels.
SHIPPING METHOD: The orders of fresh truffles are processed from Monday to Wednesday until 2 p.m., while the orders received later will be processed the following Monday. The package will be delivered within 24/48h after the order fulfillment. The products will travel in isothermal boxes with ice, in order to assure their integrity and freshness, as freshly harvested.
