MARZUOLO TRUFFLE (Tuber borchii vitt. O tuber albidum pico): the marzuolo or bianchetto truffle is very often confused with the white truffle because they are very similar. Its peridium is smooth and of a whitish or reddish-yellow color. Its gleba is marbled with white veins. Its size can vary a lot, ranging from specimens smaller than a hazelnut inland, to ones weighting a hectogram or more along the coast. It grows in pine forests and under oak trees. The harvest period runs from January 15th to March 31st. Its aroma is strong with garlicky traits, although very pleasant. It can be eaten both raw and cooked. In the kitchen, it is highly appreciated both for its aroma and for the most affordable price compared to that of the white truffle.
RECCOMENDED QUANTITY: It’s recommended to use a minimum of 15g of product per portion.
STORAGE CONDITIONS: To ensure an optimal preservation of the product, the truffles must be stored in the fridge at the temperature of 3°C-4°C in a glass or plastic airtight container, wrapping up every piece in towel paper and making sure to change the latter every single day. Consume within 4/5 days after the order is delivered.
Avoid freezing the truffle. As a matter of fact, the organoleptic quality of this kind of truffle is enhanced if consumed raw and cut into very thin slices on the eggs, tagliatelle and risotto with butter or meat tartare.
CLEANING INSTRUCTIONS: Before consumption, the truffle should be washed under a light stream of cold water, brushed, to get rid of all the dirt, and then left to dry wrapped in paper towels.
SHIPPING METHOD: The orders of fresh truffles are processed from Monday to Wednesday until 2 p.m., while the orders received later will be processed the following Monday. The package will be delivered within 24/48h after the order fulfillment. The products will travel in isothermal boxes with ice, in order to assure their integrity and freshness, as freshly harvested.
